Summer is finally hereee! Well, at least that's how it feels here in Montreal. We've been having heatwaves for like, 5 days straight now. And while we can't complain cause we'd take a heatwave over -20 degrees any day, you do tend to feel PARCHED during heatwaves. And for all you guys who are desperate like us for some cold, refreshing meals on days like these, worry not. This recipe is SUPER simple and will make you feel instantly refreshed after one bite of this delicious Asian Cold Noodle Salad with Peanut Butter Sesame Dressing!
A little bit of dish description for you to get an idea of how delicious this is: Perfectly chewy and refreshingly cold Asian noodles, dressed with a slightly creamy, savoury, and nutty peanut butter sesame sauce. And of course, you can't forget the cold, fresh sliced cucumbers to go with the noodles for some crunch!
Now you get the idea of how yummy AND simple this dish is. Boil your noodles and refrigerate, make your sauce, and add the cucumbers. That's about it!
Your choice of noodle is important in this recipe. Try not to use rice noodles, we think it's definitely better with wheat noodles. We also used slightly thicker noodles for the texture and more chewiness, but that's our own preference! It might also be possible to make it with some fettuccines if you don't have any Asian wheat noodles lying around the house.

- 2 tbsp low-sodium soy sauce
- 2 tbsp sesame oil
- 7 tbsp warm water
- 2 tbsp granulated sugar

- 100 grams wheat noodles
- 1 small cucumber thinly sliced
