Shrimp Toast

Shrimp toast is a side dish that has been created by mixing Western and Chinese influences. The shrimp paste is soft and savoury, while the toast is crispy and slightly sweet. The combination of texture and flavors will leave you wanting more!

Ingredients

  • 1/2 lb shrimps deveined, peeled
  • 2 tsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic minced
  • 1/2 tsp sugar
  • 1 large egg white
  • 7 slices milk bread sliced in half, to form triangles
  • 1/4 cup cilantro minced
  • 2 green onions finely sliced
  • 1 tbsp sesame seeds
  • 2 tsp cornstarch
  • vegetable oil or any neutral oil, for frying

Instructions

  • In a blender, or food processor, put your shrimps, soy sauce, sesame oil, minced garlic,sugar, egg white, minced cilantro, finely chopped green onions and corn starch. Blend until smooth, creating a spreadable paste.
  • With a butter knife, spread the shrimp paste on each bread triangle, about 1/4 inch in thickness. Sprinkle each triangles with sesame seeds.
  • In a medium pan, or skillet, heat about 1/8 inch of oil at medium high. Drop a few sesame seeds, and if it starts to sizzle, it means your oil is ready.
  • With a spatula and chopsticks, pan-fry your bread triangle with the shrimp side down first. Let fry for about 3 minutes, and flip on the other side. Fry for another 3 minutes.
  • After pan-frying, transfer immediately to a cooling rack to drain. Let rest for 1-2 minutes.
  • Serve with a sweet and sour sauce, and enjoy!
