The other day was Mother’s Day and I decided to cook for my mama! And I wanted to make a unique appetizer to make the dinner a little bit more special. Something that we wouldn’t necessarily make everyday. So while I was browsing on Pinterest for food ideas, I saw a picture of these gorgeous potato nests. I thought: “Now these will definitely impress my parents!” And it did! Not only were these potato nests very delicious, they were also something that my parents never really saw or ate before, which makes it impressive to them. Now, although a bit long, these potato nests are very easy to make. And you can fill it up with anything you find would match well. I decided to fill it with garlic mashed potatoes, which was really good! I’m planning to try it with a guacamole and sour cream filling next time, should be delicious! But back to this recipe, I was pretty proud to have successfully made the nests at first try (pat self in the back). And that means that anyone can nail it at first try too and it’s really easy to make, even though it looks complicated. Just follow these simple steps and you are sure to impress your guests with your new oh-so-fancy appetizers!
- 1 large potato
- 1 egg white
- Frying oil
- 1 large potato
- 3 cloves of garlic
- 2 tablespoons of unsalted butter
- 3/4 cup of milk
- 1 tablespoon of mayonnaise
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 2 tablespoons of chopped green onions
- Salt and pepper to taste
- Peel of the skin of the potato and grate potato. Place grated potato in a bowl of cold water and let them submerge for 5-10 minutes.
- Dry the grated potato with kitchen towel or paper towel. Place about 1-2 tablespoons of grated potato into each told of a muffin baking tray and shape them with the back of a spoon to form nests. You should be able to make 5 potato nests with 1 large potato. Bake at 400 degrees F for 20-25 minutes, until the potato nests take its shape and can hold its own.
- Fill up a shallow frying pan with oil about 1/2 inch deep. Take potato nests off of mold and fry each nest for about 30 seconds or until they are crispy.
- To make the filling, boil 1 large potato until tender and mash the potato. In a frying pan, melt the butter and cook the garlic until tender. Pour the butter-garlic mixture into the mashed potatoes and add in the rest of the ingredients and mix well.
- Place the filling into each potato nest and garnish with chopped green onions.
